Cucumber Avocado Tomato Salad is one of my springtime favorite recipes. There are so many things I love about spring. Fresh fruits and vegetables are near the top of that list. There’s just something so refreshing about fresh produce. And this salad is bursting with fresh produce.

While all the ingredients in this salad can be easily found year round, it has that refreshing taste that is so reminiscent of spring and summertime. It’s packed with crisp cucumbers, juicy tomatoes, and creamy avocado then topped with a light lemon vinaigrette dressing.

We have tiny baby cucumbers growing in our garden right now. I can’t wait to try this salad out with homegrown cucumbers and tomatoes. If only our avocado tree actually bore fruit.

I always need easy side dishes that I can quickly throw together. With three kids clamoring for food (okay, and me too), getting dinner to the table quickly is essential! I’m sure you need quick and simple side dishes too. Who doesn’t? Well, if so, then this Cucumber Avocado Tomato Salad is perfect for you!

This salad is made in just minutes with only a few ingredients. In fact, those few ingredients are probably ones that you already have. You won’t find yourself scrambling at the last minute trying to put something together. Simple ingredients makes life simpler. Now, I know you want that!

Gluten-free, Dairy-free, and Allergy-Friendly

Not only is it super easy, but this salad is perfect for those that can’t eat the ever-so-present dairy-filled side dishes. This Cucumber Avocado Tomato Salad is perfectly allergy-friendly and is free from wheat, eggs, dairy, and nuts.

When my oldest son was diagnosed with food allergies, finding dairy-free and gluten-free side dishes was a challenge. Even vegetable sides were filled with ingredients he couldn’t eat. Why are so many vegetables smothered in cheese and roasted with Parmesan? I mean, I get it. But it was always frustrating from a food allergy standpoint!

This salad doesn’t contain any of those ingredients. It’s gluten-free, diary-free, top 8 allergen free, and vegan! So it’s really a great choice for everyone! It’s the perfect side dish to serve at a dinner or take along to a BBQ because just about everyone can eat it! Plus it’s just so tasty.

I could eat this salad all by itself in one sitting. Truly. It’s lovely on it’s own.

What You Need

Equipment Needed

You hardly need any equipment to make Cucumber Avocado Tomato Salad. No fancy tools required. Even a simply stocked kitchen should have all you need. You just need a cutting board, a knife, a whisk (or even a fork), and measuring spoons. Super basic and simple!

INgredients Needed

There are really very few ingredients you need for this Cucumber Avocado Tomato Salad. Here’s what you’ll need:

  • Roma tomatoes
  • English cucumber
  • Avocados
  • Olive Oil
  • Lemon Juice
  • Vinegar
  • Spices: minced garlic, parsley, basil, salt, and pepper

In addition, I love to add onion to my salad. My husband has a deep hatred of onions so I always dish some salad out for him before adding the onion. You may also add cilantro if that’s your thing. It’s not mine.

Does It Need to Be an English Cucumber?

Of course not! You can use any kind of cucumber you have. I just prefer English cucumbers since they have fewer seeds and therefore are sweeter and crunchier. Any kind of cucumber will be delicious though!

Tips For Making Cucumber Avocado Tomato Salad

Due to the avocados in this salad, it is best made right before serving. If you must make in advance, I suggest chopping the tomatoes, cucumber, and onion and store them, covered, in the fridge. You may also make the dressing in advance, but I recommend you keep that separate until just before serving. When it’s time to eat, chop the avocado and add it along with the dressing to the rest of the salad.

Another tip: while Cucumber Avocado Tomato Salad is made so quickly you don’t really need to worry about the avocados browning, I always save them for last. Even when I make this salad right before serving, the last thing I do is chop the avocados. I cut the tomatoes, cucumbers, and onion, then make the dressing, and then chop the avocado.

Ingredients
  

  • 1 English cucumber
  • 4 Roma tomatoes
  • 2 avocados
  • ½ onion optional

Dressing

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp minced garlic
  • ½ tbsp dried parsley
  • ¼ tsp dried basil
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Chop cucumber, tomatoes, and onions and place in a salad bowl.
  • In a small mixing bowl, whisk together the olive oil, lemon juice, and vinegar. Mix in seasonings.
  • Chop avocado and gently mix with cucumbers, tomatoes, and onion. Pour dressing over the salad and lightly toss.
