Total Time:1 hour 45 minutes
1 Spiral cut ham
10 oz jar apricot preserves
6 oz can pineapple juice
1/4cup brown sugar
1 tbsp white vinegar
1 tbsp Dijon mustard
1/4 tsp cinnamon
1/8 tsp cloves
Place an oven-safe wire rack in a large roasting dish or baking pan. Add 2 cups of water to the pan and then place the spiral cut ham cut side down on top of the wire rack. Cover completely with foil and bake at 300 degrees for 1 hour.
Meanwhile, combine apricot preserves, pineapple juice, brown sugar, white vinegar, Dijon mustard, cinnamon, and cloves to a small sauce pot over the stove. Cook over medium heat, while stirring occasionally, for about 10 minutes.
Remove ham from the oven after 1 hour. Using a basting brush, cover the ham with 1/2 of the pineapple apricot glaze. Cover the ham with the foil and return to the oven for 15 more minutes.
Repeat the previous process by basting the ham with the remaining glaze, covering with foil, and returning to the oven for 15 to 20 more minutes, or until the ham reaches an internal temperature of 140 degrees.e5
